Nic's Olive Oil & Orange Crinkle Cookies

This recipe makes 24 large cookies, but can easily be halved for a more reasonable batch of medium sized ones. They are absolutely delicious and so easy to make! They taste prominently of olive oil so use a good quality. We used Tropicual Extra Virgin Olive Oil - De Vega.

Ingredients

200g of olive oil 

340g brown sugar

110g granulated sugar

2 teaspoon pure vanilla extract

2 large eggs

320g plain flour

2 tablespoons cornstarch

1 teaspoon baking powder

1 teaspoon baking soda

1.5 teaspoon fine salt

Zest of 1 orange

Method

  1. Preheat the oven to 350F / 180C. Line a creased cookie sheet with parchment paper.
  2. In a bowl, whisk together the olive oil, sugars, vanilla and egg very well. Add the cornstarch, baking powder, baking soda, orange zest, salt and flour and, using a rubber spatula, mix until well combined.
  3. Using a tablespoon, )2 for large cookies or 1 for medium sized cookies), spoon onto the baking sheet leaving approximately 5cm between them as they will spread.
  4. Bake the cookies for about 10 minutes before checking them. A fan assisted oven will cook quicker. If they have large crinkles they are done. If not or just beginning to, leave them in for another 2-4 minutes. Take them out when they are puffy, have crinkles all over and are dark one the edges. They will flatten as they cool.
  5. Repeat the cooking process in batches, depending on the size of your baking sheet. If you have 2 baking sheets, even better.
